PUBLIX APRONS COOKING SCHOOL

L.B. Braswell, Senior Managing Chef

BIO:
At a young age L.B. began cooking Korean food with his grandmother. He graduated from the Art Institute of Tampa in 2012. He spent time working in the kitchen and the front of house, completely immersing himself in the restaurant industry. Working with new and interesting ingredients continue to fuel his passion for food.

MARLOW’S TAVERN

Ben Krawiecki, Research & Development/Purchasing Manager

BIO:
As both research and development and purchasing manager, Ben Krawiecki relishes his role in creating new menu items for Marlow’s Tavern. Since joining the Marlow’s team in 2008, he has been a key ingredient in recipe development for the diverse combination of classic dishes that grace the modern tavern menus. After careful product selection and multiple taste tests, the Culinary Institute of America (CIA)-trained chef personally prepares the recipes, determining the perfect presentation and training the kitchen teams on how to deliver them with consistency and excellence.

His passion for proper preparation was ignited as a young boy watching his Latvian-born grandmother cook. Memorable work-study and externship programs followed at popular Atlanta restaurants like Violette, Brooklyn Café and Canoe, and after graduating from the CIA, Krawiecki recognized he also needed to understand the business side of culinary arts. While earning a degree in restaurant management from Florida International University, he became part of the opening team of Westin Diplomat Resort and Spa in Hollywood, Florida, rising through the ranks to become executive chef of the facility’s Hollywood Prime steak restaurant. When Atlanta ultimately called him back home, Krawiecki took on the role of chef at the River Room Restaurant & Tavern before helping to open Luckie Food Lounge.

Krawiecki appreciates Atlanta’s diverse food scene and enjoys dining out and cooking with his two young, adventurous daughters.

LOCAL REPUBLIC

Chef Julian

BIO:
Though his culinary journey began long before Local Republic, Chef Julian joined the LR Family over 5 years ago. He eventually earned Sous Chef and trained under Chef Alex before stepping into his new role as Executive Chef in August of 2020.

EDEE’S PLACE BBQ

Edmund Nelson, Dee Humprey, Shirley Nelson,

BIO:
During a family reunion in 2015, Edmund talked his cousin from Florida, Dee, into moving to Georgia so they could open a barbecue restaurant. They opened a food stand next to the Mini Mart on Harbins Road in Dacula. It is called EDee’s Place to represent Edmund and Dee’s names.

After a few months of success, they drove to Alabama and purchased a food truck. The popularity of the food truck prompted them to look for space in the Dacula area. They found a closed restaurant off of Liam Avenue and formally opened EDee’s Place in April 2017.

In August 2019, EDee’s Shack in Statham, GA opened.

RICO’S WORLD KITCHEN

Rico Cunnington, Owner & Chef

Born in a galaxy far far away. Rico has made his new intergalactic home in Buford Georgia for over 40 years. Not able to collect enough transparent aluminum for a safe trip home as of yet, he has assembled food from all over the world to prepare for this epic journey home. FYI he is in search of an old Speak and Spell and is in fear that a cybergenetic being from the future may be trying to derail life as we know it here on Earth. Until then, bon appetite. Oh yeah, he loves music.

Jen Swan, Chef

Jen hails from Ole New England Towne and has joined the Georgia fold. Hail Atlanta! She loves dogs and hates shopping. Her favorite color is black like her soul.
